Ingredients

  • 12 oz Ripe Cherry Tomatoes
  • 3 Bell Peppers (Green, Yellow and Red)
  • 1 Sweet Onion
  • 1 tbsp Champagne Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • Salt
  • Fresh Ground Pepper

Instructions

  1. Slice the 3 Bell Peppers and place them into a bowl.
  2. Slice the 1 Onion and place in bowl.
  3. Cut 12 oz Cherry Tomatoes into halfs and place in bowl.
  4. Add 1 tbsp Champagne Vinegar and 2 tbsp Olive Oil to the bowl
  5. Season the scallops with Salt & Pepper.
  6. Gently Mix and Toss.
